Superfood oven-roasted veggies

Sometimes, I'm craving french fries and hamburgers and chocolate lava cake. Other times, I'm really in the mood for a plate full of colourful, tasty vegetables that give me a superenergetic feeling. Today was one of those days: the perfect time to make a superfood veggie oven tray!

You can put as much veggies as you want in an oven tray like this, this one was just for my mum and me so I made it rather small and light.

What you need:
An oven tray
All the veggies you want, cubed (I chose for sweet potatoe, zucchini, yellow pepper and fennel)
Olive oil
Salt and pepper
Herbs like basilic and rosemary

Preheat the oven to 200 ° C, cube all the veggies and place them in the oven tray. Add salt, pepper, basilic, rosemary and other herbs you like. Place in the oven for about 40 - 50 minutes, but keep an eye on it so the veggies won't burn. It can also occur that you need to keep them in the oven longer, depending on what vegetables you used and in whate state they were.

You can eat this with bread just like that, but also as a side dish with your favourite meat and rice!
